Last week I got totally distracted doing household chores, folding laundry, playing outside with kids, and suddenly I looked at the clock at saw that it was 5:15!!!
How did it get so late so fast?!
I knew that my original dinner plans for the day weren’t going to work because prep and cook time would have been over an hour and my family was hungry NOW!
That’s when this Baked Barbecue Chicken saved my little tooshie and was our little dinner hero!
Plus it was sooooo yummy -and super easy- that it will be making a regular appearance in our meal planning schedule.
WHAT YOU NEED:
Chicken 3-4 pieces cut or pounded thin (to cook faster)
BBQ Sauce -about a cup
1/2 Yellow Onion
Shredded Cheese
WHAT TO DO:
Preheat oven to 350 degrees
Spray a baking dish and place chicken in it.
Pour BBQ sauce –about a cup– I just made sure to drizzle enough to cover each piece of chicken-
Place sliced onions over chicken
Top with shredded cheese
Bake at 350 degrees for 35-45 minutes or until chicken is completely cooked through (each oven is different).
We served ours with a side of asparagus that was about to go bad if I didn’t use it up and some loaded garlic mashed potatoes. The great thing about this chicken is that if you have any leftovers it would go great in a salad to use the next day! Too bad we didn’t have any though, it was just too good!
